You do not have to move everything at once. Most people start with whichever of these they recognise.

Can we start with one service and add the others later?
Yes, and most people do. Each service stands on its own, with its own agreement. Adding a second later means the same team, the same point of contact, and no handover, because we already know what you run.
What if we already have an IT company?
Then start somewhere else. Plenty of our work begins with automation or a software build while somebody else keeps the lights on. If you later want to consolidate, we can, but nothing here requires you to fire anyone to get started.
Do we have to move everything at once?
No. We start with what is causing the most disruption, document what you already have, and leave the rest alone until there is a reason to touch it. Replacing working systems for the sake of it is how migrations go wrong.
